OMG - I just made the most amazing quinoa salad for Easter and made it again this weekend - it's so delicious. Basically, it's cooked quinoa, chopped mint and parsley, chopped green onion, diced beets, pomegranate seeds and marcona almonds. You make a cup of lemon juice+red wine vinegar+S&P+sugar (I used stevia but you could do Agave syrup or sugar or even honey) to equal olive oil, then dress and let it sit. It's incredibly filling, protein and veggie filled and delicious beyond belief.
